Q: I made the Coconut Cream Pie (pages 456-457) and it wasn’t sweet enough for my taste. What happened?
A: The ingredient line for the coconut in our pie recipe should read 2 cups shredded sweetened coconut. If you prefer to use shredded unsweetened coconut, whisk 1/3 cup sugar into the cream along with the egg yolks, vanilla, cornstarch and coconut in Step 3.
Q: In your Fish Stew Man’s Red Fish Stew (pages 249-251) when do I add the chiles that I toasted and reserved in Step 1 into the stew?
A: Add them to the pot along with the broth, wine and bay leaves in Step 2.
Q: In Step 1 of your Shrimp Burgers (pages 382-383), adding 1 whole recipe—1 scant cup—of Lee Bros. Shrimp Boil (page 553) to the water seems excessive. Am I crazy?
A: No, in fact, you’re very wise! The ingredient line should read 1 tablespoon Lee Bros. Shrimp Boil (page 553). You may also substitute a store-bought shrimp or crab boil.
